Not only do our purveyors follow a back-to-nature ideology, but you can find Executive Chef Nathan Bohning gathering salt from the local salt pond, free diving for VI spiny lobsters or foraging for exotic edible vegetation and incorporating it into that evening’s menu. It is with this passion that the team of Ocean 362 successfully provides you with a one-of-a-kind Caribbean experience.

Head upstairs to our gorgeous third story bar with the best sunset view on the island. Relax and enjoy our hand-crafted libation you will face an open-air view of the Caribbean waters making it feel as if you were floating out at sea. The bar program, explores the artistry and history of classic cocktails while contemporizing them with a local flare—everything from locally sourced infusions to bottled Caribbean Lime Cello to thoughtfully derived “mocktails” along with New World wines and craft beers add for a well-rounded beverage offering. harmoniously pair with the restaurant’s “island to table” principals and perfectly accentuates the cuisine. Dinner reservations are accepted for the 12 surrounding bar seats so be sure to make reservations in advance as spots go quickly.

Executive Chef Nathan Bohning

Executive Chef Nathan Bohning lived on St John from 2012 – 2015 working at some island favorites like Asolare, Sushi St. John and our very own Ocean 362. In 2015 he met his now wife, FOH Manager Laura Valente, while she was working front of house here at Ocean 362. For the last four years they have been island hopping their way around the world running Food & Beverage Programs in New Zealand, The Kingdom of Tonga and St Croix.

Chef Nathan integrates flavors and techniques he’s learned all over the world into our menu and features products like Free-Range Organic Chicken, 1855 USDA Prime Steak, Wild Caught Shrimp from Argentina and of course fresh fish out of our own Caribbean Waters. We buy many local vegetables and herbs from our friends at Josephine’s Greens in Coral Bay and the honey on our dishes and in our cocktails is from local company Buzzghut Apiary.
